Beef and Potatoes (Print Version)

# Ingredients:

→ Meat & Vegetables

01 - 1 1/2 pounds beef stew meat, cut into bite-sized pieces
02 - 1 pound baby potatoes, halved

→ Seasonings & Liquids

03 - 4 tablespoons unsalted butter, melted
04 - 3 cloves garlic, minced
05 - 1 teaspoon onion powder
06 - 1 teaspoon smoked paprika
07 - 1/2 teaspoon dried thyme
08 - 1/2 teaspoon dried rosemary
09 - 1/2 teaspoon salt (or to taste)
10 - 1/4 teaspoon black pepper
11 - 1/4 cup beef broth
12 - 1 tablespoon olive oil

# Instructions:

01 - Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer to the slow cooker.
02 - Add baby potatoes to the slow cooker.
03 - In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
04 - Add beef broth to the slow cooker.
05 - Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
06 - Serve warm, garnished with fresh parsley if desired.

# Notes:

01 - For extra richness, add a splash of heavy cream to the slow cooker during the last 30 minutes of cooking
02 - Swap baby potatoes for sweet potatoes or carrots for a sweeter flavor profile
