Quick and Cozy Soup (Print Version)

# Ingredients:

→ Base and Aromatics

01 - 2 tablespoons olive oil, divided
02 - 8 ounces shiitake mushrooms, thinly sliced
03 - 2 tablespoons grated or minced fresh ginger
04 - 4 cloves garlic, pressed or minced

→ Liquid and Seasonings

05 - 6 cups vegetable broth
06 - 2 tablespoons soy sauce
07 - 2 teaspoons toasted sesame oil
08 - Freshly ground black pepper

→ Main Ingredients

09 - 16 to 20 ounces frozen potstickers
10 - 5 scallions, thinly sliced
11 - 3 baby bok choy, ends trimmed and leaves separated

→ Optional Toppings

12 - Chili crisp
13 - Toasted sesame seeds
14 - Furikake seasoning
15 - Fried garlic

# Instructions:

01 - Heat 1 tablespoon of oil in a large stockpot over medium-high heat. Sauté mushrooms until browned, stirring occasionally.
02 - Add remaining 1 tablespoon oil, garlic, and ginger. Sauté for 1-2 minutes until fragrant, stirring occasionally.
03 - Pour in vegetable broth and soy sauce. Bring to a boil. Add frozen potstickers, half the scallions, and bok choy.
04 - Cook for 3-4 minutes until potstickers are done. Stir in sesame oil and black pepper. Taste and adjust seasoning if needed.
05 - Serve immediately, garnished with remaining scallions and your choice of optional toppings.
