Easy One-Pan Chicken Dinner (Print Version)

# Ingredients:

→ For the Chicken

01 - 4 boneless skinless chicken breasts (or thighs)
02 - 1 teaspoon Italian seasoning
03 - ½ teaspoon smoked paprika
04 - ½ teaspoon salt
05 - ¼ teaspoon black pepper
06 - 1 tablespoon olive oil

→ For the Potatoes

07 - 1.5 pounds baby Yukon Gold or red potatoes, halved
08 - 3 tablespoons olive oil
09 - 4 cloves garlic, minced
10 - ⅓ cup grated Parmesan cheese
11 - ½ teaspoon salt
12 - ¼ teaspoon black pepper

→ For Garnish

13 - 1 tablespoon fresh parsley, chopped

# Instructions:

01 - Start by heating your oven to 400°F (200°C). While you're waiting, grab a large baking sheet and either line it with parchment paper or give it a light coating of oil.
02 - Take your chicken and pat it dry with some paper towels. Mix together your Italian seasoning, smoked paprika, salt, and pepper in a small bowl. Drizzle the chicken with olive oil, then rub in all those gorgeous seasonings until every piece is well coated.
03 - In a big bowl, toss your halved potatoes with olive oil until they're glistening. Add the minced garlic, Parmesan cheese, salt, and pepper, making sure every potato gets its fair share of the good stuff.
04 - Arrange your seasoned chicken on one side of the baking sheet. Spread those potatoes out on the other side - make sure they're not crowding each other so they can get nice and crispy.
05 - Pop everything in the oven for about 25-30 minutes. Flip those potatoes halfway through so they cook evenly. Your chicken is done when it hits 165°F (74°C) - use a meat thermometer to be sure!
06 - Want to take it up a notch? In the last 5 minutes, sprinkle some extra Parmesan over everything and switch to broil for a beautiful golden crust. Finally, scatter some fresh parsley over the top and serve while it's hot!
