Heat your oven to 400°F. Line a baking sheet with parchment paper or give it a light coat of cooking spray.

Combine olive oil, minced garlic, smoked paprika, parsley, onion powder, salt, and pepper in a small bowl. Add lemon zest and a tablespoon of juice.

Pat those cod fillets dry with paper towels and lay them on your baking sheet. Brush them generously with your seasoning mixture.

Pop them in the oven for 12-15 minutes until they're opaque and flake easily with a fork. They should hit 145°F inside.

Give them a final squeeze of lemon juice, sprinkle with fresh parsley if you like, and serve with those lemon wedges on the side.
