Cajun Chicken Pasta (Print Version)

# Ingredients:

→ Main Stuff

01 - 1 box penne noodles 8 oz
02 - 2 chicken breasts flattened with no skin

→ For the Sauce

03 - 2 big spoons olive oil nice quality
04 - 2 big spoons plain butter
05 - 2 garlic cloves chopped tiny
06 - 1 big spoon regular flour
07 - 1½ cups cream and milk mix
08 - ⅓ cup fresh grated parm plus extra for on top
09 - 1½ big spoons Cajun spices split up

→ Top it Off

10 - 1 fresh tomato cut in chunks
11 - Handful fresh parsley chopped up
12 - Salt n pepper however you like it

# Instructions:

01 - Cook penne pasta according to package instructions.
02 - Heat the extra virgin olive oil in a large skillet over medium heat. Season the chicken on both sides with 1 tablespoon Cajun seasoning. Add to the skillet. Cook for about three minutes on each side or until the chicken reaches an internal temperature of 165 degrees.
03 - Remove the chicken from the skillet, clean it, and return it to the medium heat.
04 - Melt the butter, add the garlic and sautée for about 30 seconds. Whisk in the flour and cook it for another 30 seconds. Very slowly add the half and half, initially about a tablespoon at a time, so the sauce thickens. Add more quickly after you have added about half a cup.
05 - Stir in the parmesan cheese and allow it melt completely. Add the remaining ½ tablespoon Cajun seasoning and season with salt and pepper to taste.
06 - Add the penne to the sauce, top with tomatoes, parsley, parmesan cheese, and the sliced cooked chicken. Enjoy immediately!

01 - Make it more or less spicy by changing how much Cajun seasoning you use
02 - Eat right away while the sauce is nice and smooth
