Bring a large pot of water to a boil. Add salt and cook pasta for 2 minutes less than package instructions. Reserve 2½ cups of pasta cooking water before draining.

Heat olive oil in a frying pan. Cook chopped bacon over medium-high heat for 4-5 minutes until crispy. Remove bacon with a slotted spoon, leaving the bacon grease in the pan.

Reduce pan heat and add garlic and onion. Cook for 3-4 minutes until onion is soft, adding extra olive oil if needed.

Add heavy cream and 1½ cups pasta cooking water to the pan. Bring to a simmer and cook for 2 minutes. Stir in grated parmesan until melted.

Add cooked pasta to the sauce, tossing gently. Cook 1-2 minutes until pasta is done to your liking. Add more pasta water if sauce becomes too thick. Stir in crispy bacon and season to taste.

Plate the pasta and garnish with fresh parsley if desired. Serve hot and enjoy!
