Quick Creamy Pasta Dinner (Print Version)

# Ingredients:

→ Pasta and Salt

01 - 1 tablespoon salt
02 - 12 oz dried pasta

→ Bacon and Aromatics

03 - ½ tablespoon olive oil
04 - 10 strips bacon, chopped
05 - 1 small onion, finely chopped
06 - 2 cloves garlic, minced

→ Sauce Ingredients

07 - 1½ cups heavy cream
08 - 1½ cups pasta cooking water
09 - 1 cup grated parmesan

→ Seasoning

10 - Salt and pepper to taste

→ Garnish

11 - Fresh parsley (optional)

# Instructions:

01 - Bring a large pot of water to a boil. Add salt and cook pasta for 2 minutes less than package instructions. Reserve 2½ cups of pasta cooking water before draining.
02 - Heat olive oil in a frying pan. Cook chopped bacon over medium-high heat for 4-5 minutes until crispy. Remove bacon with a slotted spoon, leaving the bacon grease in the pan.
03 - Reduce pan heat and add garlic and onion. Cook for 3-4 minutes until onion is soft, adding extra olive oil if needed.
04 - Add heavy cream and 1½ cups pasta cooking water to the pan. Bring to a simmer and cook for 2 minutes. Stir in grated parmesan until melted.
05 - Add cooked pasta to the sauce, tossing gently. Cook 1-2 minutes until pasta is done to your liking. Add more pasta water if sauce becomes too thick. Stir in crispy bacon and season to taste.
06 - Plate the pasta and garnish with fresh parsley if desired. Serve hot and enjoy!

# Notes:

01 - Can use any pasta shape, especially long noodles
02 - Substitute ham or turkey bacon if preferred
03 - Use freshly grated parmesan for best results
