Creamy Ham and Chicken Pasta (Print Version)

01 - 1 pound boneless, skinless chicken breast, cut into ½-inch pieces
02 - Salt and pepper to taste
03 - 8 ounces diced or cubed ham
04 - 8 ounces penne pasta
05 - 2 cups shredded Swiss cheese

→ Sauce Ingredients

06 - 1 tablespoon olive oil
07 - 2 tablespoons unsalted butter
08 - ½ cup minced onion (about ½ medium onion)
09 - 2 teaspoons minced garlic (about 2 cloves)
10 - 2 tablespoons all-purpose flour
11 - 2 cups chicken broth
12 - 2 cups half and half
13 - 2 teaspoons Dijon mustard
14 - 1 teaspoon dried thyme
15 - 1 teaspoon dried parsley

# Instructions:

01 - Heat olive oil in a large pot over medium-high heat. Season the chicken with salt and pepper, then add it along with the ham to the pot. Cook, stirring occasionally, for 5-8 minutes or until the chicken is cooked through. Remove from the pot and set aside.
02 - While the chicken cooks, prepare the pasta according to package instructions. Drain and set aside.
03 - In the same pot, melt butter over medium heat and add the minced onion. Cook for 3-4 minutes until the onion is tender, then stir in the garlic and cook for 1 minute until fragrant. Whisk in the flour to create a paste, then gradually add chicken broth and half and half, whisking to combine into a smooth sauce. Stir in Dijon mustard, thyme, parsley, and additional salt and pepper to taste.
04 - Add the cooked chicken, ham, and pasta to the pot with the sauce. Mix well to coat everything evenly. Remove the pot from heat and stir in the shredded Swiss cheese until melted and fully incorporated. Serve warm.
